Meet Jay.
She’s what’s called a “Green Queen Easter Egger Bantam.” She’s a designer breed, a mix of Ameraucanas, Silkies, Easter Eggers and Araucanas crossed to lay mostly green eggs.
This is Mouse, Jay’s sister, when she was five days old.
There’s also Sally and Opal.

You actually can’t forget about Max. He is a rooster. He screams all day long and doesn’t lay any eggs.
He was a mistake.
Anyway, the chickens—Jay, Mouse, Sally and Opal—lay these green eggs that are remarkable.
Not only for the subtle green hue of their shells, but the yolks. You haven’t experienced yolks this rich since your 30th birthday dinner at Blue Hill at Stone Barns.
But you know something, these eggs are better than that.
These eggs are better because I tirelessly raised them by hand for the past four months.
These eggs don’t deserve to be scrambled and eaten on a paper plate over the kitchen sink while looking at your phone wondering what the purpose of your life is.
These eggs are perfect and they belong in a breakfast sandwich.
I wanted to enlist the help of a true culinary genius so that my eggs could reach their full gastronomic potential. So I teamed up with Shane who runs the River Eatery in Barryville, New York.
Together we created what some people are calling the best egg sandwich in the world.
We call it the Emerald Egg Sandwich. Here is what’s in it:
Kalina Farms Green Eggs poached in grass-fed ghee
In-house smoked pork belly
Knickerbocker Farms barrel-aged 18-month extra sharp cheddar
Maldon salt and freshly cracked Tellicherry pepper
Served on a Costanzo bun

The River Eatery is located in downtown Barryville, NY, in the parking lot at the old Barryville General. Fall hours (starting 9/6/24) are 8am-3pm, Mon-Tues and Thurs-Sat. Closed Sundays and Wednesdays.
